Stir up a package of Presto Soda Bread Mix but instead of pouring batter into a loaf pan, gently flatten dough to a thickness of about 3/4” between two sheets of plastic wrap sprayed with cooking spray (plastic wrap sheets should be about 2 feet long each).
Combine ˝ cup firmly packed brown sugar, ˝ cup margarine, and 2 tsp cinnamon and stir until smooth.
Remove upper sheet of plastic wrap and spread cinnamon mixture over top of dough in a thin layer.
With the help of the bottom sheet of plastic wrap roll the dough over on top of itself into a jellyroll like shape.
Cut “jellyroll” into twelve slices and place a slice into each cup of a pre-greased muffin pan.
Bake at 350F for 25-30 minutes and let cool a while before eating.
(For more authentic taste but not as fast use the Essential Bread Mix: prepare batter using oven method, and let the slices rise in the muffin pan for 25 minutes before baking).
