Judy's Magic Mixes - Recipes
Cornbread Muffins
You will need:
- 1 package Judy’s Magic Mixes Simply Magic Muffin Mix
- 2 cups yellow corn meal
- 1 tbsp gluten-free baking powder
- 1/3 cup sugar
- 3 eggs lightly beaten
- 2/3 cup oil
- 1 1/3 cup milk or milk substitute
- baking cup liners for (best results)
Directions:
- Preheat oven to 350 F.
- In a large mixing bowl, combine the eggs, oil and milk (or milk subsitute).
- Add the contents of the Vanilla Muffin Mix, the cornmeal, baking powder, and sugar. Stir well.
- Spoon mixture into paper liners in two 12-count muffin pans (fill each cup 2/3 of the way up).
- Bake for 23-25 minutes.
- Allow to cool in the pan 15 minutes before removing muffins to a rack for complete cooling.
