Using the Simply Magic Cake Mix as a base:
Add 1/3 cup of your favourite apricot jam or apricot preserves.
Add 1/4 cup of sliced or slivered almonds.
Instead of 2/3 cup of milk or milk substitute, use 1/3 cup of Amaretto and 1/3 cup of milk or milk substitute. For a very intense cake, use 2/3 cup Amaretto instead of 2/3 cup of milk or milk substitute.
Add 2 tsp of almond extract.
This recipe was inspired by an incredible jam from Manitoulin Island called "Apricot Almond Amaretto Jam". We originally made the cake by putting half a jar of the jam into the cake mix and baking it, and we had to develop our own recipe when we ran out of the jam...
